Happy Passover & Easter to y’all!

Every two weeks when I write this email, I look back at my photos to see what I want to share with you. It’s SO fun to go back and look at my camera roll. If you haven’t done that recently, 12/10 recommend. I honestly forget about what happens each week, so going back and looking at the photos is a great reminder of all the things we did, even if it feels like I got nothing done.

I was so wrapped up in making sure everything was set for Charli’s first passport that I COMPLETELY FORGOT to check my own passport. It turns out it’s expired. So I am going to handle that this week and have to get a rush passport. Our next trip is in 2 weeks, so why wouldn’t I make it interesting?!

Today is the last day of the EQUIP Foods BOGO 40% off sale! This is the protein that I LOVE and use for smoothies, in my greek yogurt bowls, and bake with. I love this protein powder because it is an animal-based protein, but is also dairy-free, so a great option if you are avoiding dairy. I know, I said I mix this into greek yogurt but I limit the dairy that I have, and greek yogurt is one of the only dairy sources that I tolerate (if you want support with figuring that out for yourself, let me know and I’ll send you some resources!). The other thing I love about an animal-based protein is that it is also high in collagen, which is great for gut health.

I made these cottage cheese protein cookies to have as a snack with the kids, and they came out really yummy! They’re a little fluffier than normal cookies, but still good and higher protein than regular cookies (the macros are about 5g protein, 8g carbs, 8g fat). If you use a low fat cottage cheese and a brown rice flour instead of almond flour, they’d be lower fat if you were looking for that, but these were super yummy this way! I used BPN Vegan protein for these cookies- I like to use that for baking because it is a closer consistency to flour than my Equip one, and I like to save that one for yogurt and smoothies with the babies.
